Jasmine Dragon Tears - Tea from the
Dragon Tears only comes from the first 3 weeks of new season growth (March).
The delicate leaves are then hand rolled into small pearls. When infused
you will see the top two leaves and the bud come to life. In fact you
may even see 'hairy down' on the bud, indicating superb quality. Coinciding
with new tea growth are jasmine bushes in spring bloom. Only the most
fragrant blossoms plucked within 1 hour of sunrise are layered between
the tea giving an intense and uplifting fragrance. An extraordinary taste
experience!

Japanese Sencha - Japan produces
some of the best green teas in the world. The primary producing area in
Japan is the Shizuoka prefecture (in the shadow of Mt. Fuji) which is
west south west of Tokyo. Over half of the yearly production of Japanese
green tea comes from Shizuoka. The production of green tea entails the
steaming of the green leaf and hand or machine rubbing. The teas are then
pan-fired which gives them a distinctive appearance and glossy look and
feel. These methods give a taste that is light in color but rich and full
in the cup.

Genmaicha is a specialty Japanese
tea that is blended with fire-toasted rice. During the firing of the rice,
it is common for the rice to 'pop' not unlike popcorn, hence the name
'popcorn tea'. Legend has it that during the 1400's a servant named Genamai
was beheaded because some rice fell in a samurai warlord's cup of tea.
The Warlord drank the brew despite the fact rice was in his tea. The flavor
was very unique & he enjoyed it tremendously. In honor of poor Genamai
he pronounced that this rice and tea be served every morning and be called
'Genmaicha' ( 'cha' being the name of tea in Japanese).
